All our reviewers are either resident destination experts or travel writers that specialise in hotels. Often they will have stayed at a hotel many times and so can see how it has changed for better or worse over the years. They know what makes a great hotel in that particular destination and will compare it contextually against local competition. When our reviewers first visit a hotel, they stay for at least one night, eat one meal in addition to breakfast and will experience all of the facilities on offer. Cap Rocat, formerly a 19th-century military fortress, has been ingeniously transformed into a five-star luxury hotel with two pools and restaurants, tennis court and sumptuous spa. Natural stone, marble, timber ceilings and mellow lighting are combined with contemporary furnishings in neutral tones and bold-hued rugs to create a refined and restful ambience. There are 30 beautifully appointed suites and two rooms – each one has a dreamy canopied daybed and private terraces that afford spectacular views to sea and the adjacent forestland. The hotel has created its own small sandy beach zone with direct access to the sea, complimentary bikes and snorkelling equipment are available to borrow, and there's a brilliant line-up of local excursions by land and sea.

Grand Hotel Son Net, a graceful 17th-century manor house, sits on a hillock above Puigpunyent village. It's sublime, with its salmon-pink façade, vast pool flanked by mature trees and 31 elegant, individually styled bedrooms. Grand portraits, international artworks and antique artefacts abound here, and staff members can happily organise deluxe yacht charters, exclusive excursions and both olive oil and wine tastings. La Residencia's beguiling setting between mountains and sea in Deia village combines with unrivalled facilities and impeccable service to offer a truly standout experience. It is a delightful labyrinth of stone paths and steps that cut through 35 acres of lush and mature gardens of cypresses and olive trees to a peaceful pool zone. There are 70 beautifully finished rooms and suites, including a private villa – most have terraces and some have private pools, and there's even an eclectic suite created by British designer, Matthew Williamson. There's something delightfully grown up about this hotel, it's the sort of place that isn't trying to be cool or edgy, it's unashamedly luxurious; the brainchild of Miguel Conde and his architect wife, Cristina Martí. The best family hotels in Spain

This is a go-slow retreat with glorious gardens where sitting quietly amongst the thickly scented lavender and dense olive trees with a glass of Rioja is firmly on the agenda. Owners Christine and Klaus-Michael Kühne have left nothing to chance at this rural hideaway; yes all hotel rooms are spacious (it is a former castle after all) and have pretty terraces, balconies or patios but its attention to detail is truly impeccable: a handwritten welcome note, complimentary bottle of cava, fruit, and boxed ensaïmada – a local pastry – are provided in all rooms, along with beach towels. Although it's snuggled into the sleepy Spanish countryside, it's only a 20 minute taxi to the centre of Palma so a good choice if you're looking for a city injection to break up a fly-and-flop holiday.

Understated elegance and ingenious design are the hallmarks of luxurious five-star boutique, El Llorenç.
