A great pasta recipe that still feels hearty and filling thanks to the addition of fried eggs. Quick and easy to make, this dish is perfect for a meat-free dinner.

Ingredients

  • 2 large roasted red peppers (you can buy them in a jar; you need about 200g), cut into strips about 2cm wide
  • 1 tbsp capers, rinsed of salt or brine
  • 1 garlic clove, finely chopped
  • 50g coarse white breadcrumbs
  • ½ tsp dried chilli flakes
  • 3 tbsp flat leaf parsley, coarsely chopped
  • 3 tbsp extra-virgin olive oil
  • 350g spaghetti
  • 4 large eggs
  • Parmesan, grated, to serve

Method

Step

Preheat the oven to 200C/180C fan/gas mark 6.

Step

Toss 2 large roasted red peppers (cut into strips about 2cm wide), 1 tbsp capers (rinsed of salt or brine), 1 finely chopped garlic clove, 50g coarse white breadcrumbs, ½ tsp dried chilli flakes and 3 tbsp coarsely chopped flat leaf parsley together in a small gratin dish with 1 tbsp of the extra-virgin olive oil.

 Bake in the oven for 10 minutes.

Step

Cook 350g spaghetti in plenty of boiling salted water until al dente. When it’s almost ready, heat the remaining 2 tbsp extra-virgin olive oil in a frying pan and fry 4 large eggs, spooning the warm oil over the top to cook the yolks. Season.

Step

Drain the pasta (keep a little water back) then put it back in the saucepan or into a warm serving bowl. Add the pepper mixture and the fried eggs, cutting or tearing the eggs and tossing them through the pasta. 

Step

Divide between four plates and serve with grated Parmesan.
