red_door_what_for in ypsilanti: @Paper Kosmonaut -- interesting to know! perhaps it was just a brand called "Old Amsterdam". we looked for other options you mentioned but this was the only one at the store we were at. the cheese was hard and pale yellow with a rind, tasted sharp and savory and umami with those salt crystals. either way, delicious!

That is Old Amsterdam all right. Glad you liked it. Old Dutch cheese is pretty good. We even have "Antique cheese" here. You can't slice that, it just crumbles. And is delicious. And salty.Sir David The Splatter:
